I overviewed your post and found it a bit interesting that you want a low maintenance Vessel, but are sticking with the Caldari Ships. Now there is a good benefit to that (passive shielding, and you have the armor hit point buffer).
My estimate is that you cannot get her to adapt to searching for Ammunition right now (which is fine, cause its a pain in the Ass). If she Must fly the Ferox, then fit it with lazers. The amarr ship (prophecy) gets no damage bonus to lazers (just a cap reduction in its usage). So while you maybe losing possible damage on the Ferox for not using Rails/Missles, you'll still be doing as much damage as any other BattleCruiser. So worry less about Maxing out potential, and more on pure enjoyment.
with her, I'd probably Mix Lazers up a great deal. Meaning 5 lazers, 3 long range, 2 short range, 3rd and 5th lazer should be a small version (for dealing with frigates). Reason I say this is unless she understands how to use a webber, you'll probably be better off doing that.
So 2 Long range Mediums, 1 Long Range Small, 1 Short Range Mediums, 1 short range small.
Now we have 2 high slots left, that can be fitted with Nos (really depends on her), but I'd probably put a Tractor Beam there (so she doesn't have to fly to Cargo). There is 1 issue though, if she doesn't know how to use it, she might shoot her loot when she locks on (dunno if concord comes after you then).
If not, then 2 Assault Launchers (reaons I say assault) fill them with FoF missles (less worry about them that way).
Everything else should be a passive module and/or armor/sheild extenders.
And while many of the people here will basically say "DAT ZUXOR", remember THEY are not FLYING YOUR SHIP, YOU ARE. So ultimately what you outfit your ship with will determine how much fun you have with it. Yes you can go by the advice here and fit a ship so complicated your Girlfriend won't know how to use it and get frustrated with the game. So going down that path, you'll have an effective ship, but she won't/can't fly it.
You know enough about outfitting right now to know not to worry about ship bonuses (you can get bonsuses in other ways if needed). For the ship for HER enjoyment, not everybody elses.
